I made kohlrabi-pancakes today… And despite the weird ingredient kohlrabi in them, they were kid-eatable too!

If you are finnish and wondering what-the-rabi I am talking about, I can tell you that kohlrabi is kyssäkaali in finnish. I know, didn’t it just sound much prettier and exotic in english? Hehee.

Anyway, these salty pancakes were super simple to make, and you can use carrots/potatoes/beets/something totally else instead of kohlrabi if you want.

What you will need:

1 kohlrabi

1 1/2 quinoa flour (add more if needed) / or what ever flour you like to use (but quinoa works great + it is a great source of protein)

1 tsp Baking Soda

2 eggs

some salt and peppa


-Peel the kohlrabi and piece it into chunks.

– Then chop the chunks into finer pieces and then cook in boiling water until soft. Throw your kohlrabis into your blender… and blend!

– Add all the other ingredients to the kohlrabi-puree in a bowl. Mix!

– Add butter/ghee into the pan. Decide how big you want your pancakes to be. Fry the pancakes until crispy. Serve with toppings of your choice!
